Heirloom White Tepary Beans – Gila River Pima – 1 LB

Heirloom white tepary beans are a sweet flavored bean – a flavorful alternative to navy beans, nutrient packed and delicious. This ancient superfood of the Sonoran Desert has sustained our O’odham people for centuries. Highly acclaimed for it’s nutritional value the Stotoah Bavi (white tepary bean) is noted for its unique and delicious naturally sweet yet savory flavor and creamy texture.

This prized heirloom bean has been handed down for countless generations among the Akimel O’odham (River People, Pima) and our cousins the Tohono O’odham (Desert People).

The bavi or tepary bean is the most drought adapted species of bean in the world.

High in soluble and insoluble fiber and protein and a low glycemic index food.

21 grams of protein in a 1/2 cup!

Basic Cooking Instructions:
2 cups of Ramona Farms Stotoah Bavi (White Tepary beans) cleaned & rinsed
3 quarts of water
Combine beans and water in a pot.
Bring pot to a boil and reduce heat to simmer.
Partially cover the pot and cook beans until tender (approximately 2-4 hours).
Add water as needed.
Salt to taste (after cooking).
Great When Cooked In A Crock Pot!

Ramona Farms Stotoah Bavi (White Tepary) recipe
Ingredients:
1 lb. Stotoah Bavi (white tepary beans) cleaned and rinsed
¼ cup onion (quartered or diced)
½ clove of garlic
1 whole dried chili pepper OR
1/4 cup chopped carrots and/or celery
Directions:
Sort and rinse beans.
Add 2 quarts of water.
Add garlic, onions and chiles, OR carrots/celery.
(If using carrots/celery add these in the last 30 minutes of cooking.)
Bring to a boil for 30 minutes.
Reduce heat, cover & simmer (add water as needed)
For 4 to 6 hours (or until tender).
