Kalvash (garbonzo beans, chick peas) are delicious as a side dish (cooked with greens) or in hummus, salads and soups. Ramona Farms Kalvash are prepared by boiling until the skins loosen, pouring off the water with the loose skins and boiling again with meat, usually beef shank or ham bones as a soup.
Kalvash can also be boiled and mashed or pureed and used as a dip or spread with che-chemaith (tortillas). This is very similar to the Mediterranean preparation of ‘hummus’, which is made from pureed garbanzo beans and tahini. Hummus can be used as a spread on unleavened flatbread.
